Squirrel
Jimmy, the mincemeat over at Yankee Fare, has some new recipes that might make venison look like sissy fodder:
Rip the fur off and gut it. Wrap as much bacon around it as you desire. Cook until done. Take squirrel out of the pan and add flour to grease, stir and brown. Add a cupful of water, a spoonful of butter and walnut catsup. Stir together and pour over squirrel, via YF.Remember, Maine Department of Transportation permits those who hit deer to get the first cut. More on roadkill here and here.
